Winter Special Menu : Thecha- Bhakri and Palak Patal Bhaji
Hey, I am so happy today to share a winter special menu with you all. Yes, winter started and as we all know now a day’s market is fully loaded with greens as I entered to the market I decided today I will share some of the winter dishes, which are so delicious and I am sure you are going to love it. Have a look menu Thecha (green chili chutney), Palak Patal Bhaji (spinach vegetable), and Jowari Bhakri (Sorghum bread) with salad. Let’s start with Thecha (green chili chutney):

Winter Special: Thecha / Palak Patal Bhaji / Bhakri
Ingredients:
Coriander Leaves – 1 cup
Garlic cloves – 8 to 10
Cumin Powder – ¼ tsp
Chilli – 4 to 5 (as per your choice)
Peanuts Roasted – ¼ cup
Salt – ¼ tsp (as per the taste)
Combined all the ingredients in blender and make a slightly rough paste, take this paste in one bowl and prepare the condiment to add into the Thecha so get ready to do this take a pan add 2 tsp of vegetable oil ones hot add ½ tsp of mustard seeds and asafetida now add this hot tadaka (condiment) into Thecha and that’s it your Thech is ready to serve.

Now your second recipe is Palak Patal Bhaji (spinach vegetable):
Ingredients:
Pigeon Pea (Toor Dal) – 1 tbs
Split Green Gram (Moong Dal) – 1 tbs
Bengal Gram ( Chana Dal) – 1 tbs
Peanut (Moong Phalli Dana) – 1 tbs
Coconut (Sliced) – 1 tbs
Take Pigeon Pea, Split Green Gram, Bengal Gram, Peanut, and Coconut Slices combine all the ingredients in a pressure cooker and cook till it becomes soft and keeps aside.
Spinach (Fine Chopped) – 2 cups
Tomato’s (Fine Chopped) – 1 Cup
Bengal Gram Flour (Besan) – 1 tbs mix well with 4 tbs water
Oil – 2 tbs
Cumin seeds – ½ tsp
Mustard seeds – ½ tsp
Ginger (Paste) – ½ tsp
Whole red chili (break into 2 each) – 2
Garlic cloves (Paste) – ½ tsp
Turmeric – ½ tsp
Salt – as per the taste
Kala Masala or Garam Masala – ½ tsp
Asafetida – ¼ tsp
Coriander leaves – ¼ cup for garnish
Now take a pan with 1 tbs oil to make condiment Mustard seeds, cumin seeds, red chili, ginger – garlic paste, Turmeric and Kala masala (Black Masala) add one after other now add spinach, ones spinach half-cooked add tomatoes and make it soft, stir it to continue ones it is soft-cooked add softly cooked mix dals and Bengal gram flour paste with water as per your required consistency. Give it a nice boil and your Palak Patal bhaji is ready before serving to give it a nice fresh condiment with 1tbs oil, mustard seed, and asafetida.

So, here it is your Palak Bhaji also ready to serve while serving garnish with coriander leaves. Take Pigeon Pea, Split Green Gram, Bengal Gram, Peanut, and Coconut Slices combine all the elements in a pressure cooker and cook till it becomes soft and keeps aside.
Now the turn is to make Jowari Bhakri:
Ingredients:
Jowar (Sorghum) flour – 2 cup
Hot water – 1 ½ cup
Salt – ¼ tsp (as per taste)
Take deep pan boil water add 2 cups of Jowar (Sorghum) flour and salt mix well with spoon cover it for 5 min after that take one dough ball and mash and mix well till it becomes smooth and soft now start making it flat and round mold Bhakri ones you satisfied with the mold cook it on Tava pan to cook Jowari Bhakri soft there is a technique one you put Bhakri on Tava pan apply normal water on the top side of bhakri ones the first side is cooked turn it and cook the second side also than give the first side directly on the flame you can see you’re bhakri become a very soft bhakri and yes! Be careful some time your bhakri can blow like ballon so it can burst any time so while roasting on flam is careful.
