Today, we are going to make some of my favorite dips. Yes! My all dips will be vegetarian. You can try without any hesitation. So, let’s start. First, we will prepare one ingredient Aquafaba. This Aquafaba is a must for all the dips.
Aquafaba is a liquid left over from cooked chickpeas. You can get it in two ways:
1) separate a can of chickpeas and reserve the liquid. Or,
2) Cook your chickpeas and reserve the leftover liquid. Making it at home is more time-consuming. SO, please try to buy canned chickpeas for ease!
To make Aquafaba, blend chickpeas water with cream of tartar or lemon juice. Cream of tartar substitute is Lemon juice. If you are using 1/2 teaspoon cream of tartar, then use one teaspoon of lemon juice. Now mixing will be much easy and faster. It will help to make it firm and thicken.

Eggless Mayonnaise:
Ingredients:
- Aquafaba:1/4 cup
- Ground mustard: 1/4 tsp
- Sea salt: 1/4 tsp
- Apple cider vinegar: 1 1/2 tsp
- Brown rice syrup or Maple syrup: 1-3 tsp
- Sunflower oil: 3/4-1 cup
Recipe:
Add Aquafaba to a tall glass jar along with ground mustard, sea salt, apple cider vinegar, and brown rice syrup. Blend on the high-speed blender for best results. Now slowly add oil into it and if you find it is looking too thin, then add more oil. The more Sunflower oil you add, the creamier, thicker, and compacter the texture will become. You shouldn’t need more than the recommended amount of Sunflower oil. Use it immediately or transfer to an airtight container in the refrigerator until cold – about 4 hours. It will thicken even more in the cooling if some leftovers store in the fridge for up to two weeks. If you find a change in the consistency, then it is a spoiled one, do not use it.
Now we are going to add some flavor to our dip’s. Let’s start:
Ingredients:
For Ginger Mayo:
- Ginger: 1 inch
- Cumin powder: 1/2 tsp
- Black pepper: 1/4 tsp
For Garlic Mayo:
- Garlic (finely chopped): 1 tsp
- Chili Flakes: 1/4 tsp
For Herbs Mayo:
- Mint: 3 tbsp
- Green Chili: 1 or 2 as per your taste
Now, we will start making flavored mayo. First, we will make Ginger Mayo. To make ginger mayo add ginger, cumin powder, and black pepper into the blender. Make a fine paste. Mix 2 tbsp of prepared ginger paste with 3 tbsp prepared egg-less mayonnaise. Now Ginger mayonnaise is ready to serve. Enjoy it with fries.
Our second mayo is Garlic Mayo; add some garlic and chili flakes with 3 tbsp prepared egg-less mayonnaise. Now Garlic mayonnaise is ready to serve. Enjoy it with nachos.
Now today’s last mayo is Herbs Mayo this need to add mint leaves and green chili in the blender and make a paste. Now we will add 3 tbsp of clear mayo to make a herbs mayo. Now mix it well and enjoy your herbs mayo with any bread items like sandwiches or bread-sticks.
