Gooseberry Recipes – Part 4
Yes! This Friday also I am back with some of my favorite Aamla spicy recipes. Today I am going to share spicy Awala chutney and pickles recipes. Before we start, let me clear, this chutney and pickles are very famous in Maharashtra, India and this area, people use to have very spicy food. If you don’t want to add too much chilly, then you can add less chili in your recipes. Let’s start collecting all Ingredients for Awala Chutney:

Gooseberry Chutney / Awala Chutney
Ingredients:
- Oil – 1tsp
- Mustard seeds – 1 tsp
- Fenugreek seeds – 1tsp
- Udad Dal – 1 tsp
- Fennel seeds – ½ tsp
- Dry Red chili – 4 to 5
- Green Chili – 4 to 5
- Curry Leaf – 2 Strings
- Asafoetida – ¼ tsp
- Awala– 6 to 7
- Turmeric powder – ½ tsp
- Salt – ½ tsp (as per the taste)
- Coriander Leaves (Optional) – ½ cup
Now start with a pan, keep it on medium flame, ones it heated nicely adds oil into it and then add one by one mustard seeds, Fenugreek seeds, Udad Dal, Funnel seeds, Dry Red chili, Green Chili, Curry Leaf, Asafoetida, Awala, Turmeric powder, and salt to taste combine all condiments and give a nice toss till Awala becomes soft.It will take all the most 5 to 7 mins. Ones it is soft, switch off the flame and keeps it for cooling. Ones it cools down, add all roasted things in a grinder, with Coriander leaves. Coriander leaves are optional. If you want to store this Chutney for a long time, then do not add coriander leaves. Fresh coriander can spoil Chutney soon. Do not make a fine paste, this chutney should rough ground, only then you can feel, every spice flavor separately in your mouth. So, here it is Awala Chutney enjoy it with your meal and certainly this chutney is beneficial in winter days. Because most of the condiments like mustard seeds, Fenugreek seeds, Asafoetida, Awala, and Turmeric are by nature hot. Funnel seeds can solve all stomach problems. Try this spicy and tangy Chutney. I am sure you will love the taste, also have two extra bites in the meal.

Now star with Awala Pickles, in Pickles recipe, we will make one is Raw spicy and other is Steamed spicy pickles. So, first, we will go with Raw Spicy pickle and start:

Gooseberry / Amala Pickle
Ingredients:
- Awala(sliced) – 1 cup,
- Mustard seeds – 1tsp,
- Fenugreek seeds – ½ tsp,
- Asafoetida – ¼ tsp,
- Turmeric Powder – ½ tsp,
- Cumin Seeds – 1tsp,
- Coriander Seeds – 1tsp,
- Mustard oil – ¼ Cup,
- Red Chili powder – 1tbsp.
Recipe:
Take a pan to keep in medium flame, add Dry Spices step – by – step in the pan Mustard seeds, Fenugreek seeds Cumin Seeds, Coriander Seeds to roast well. Ones you find all the spices roasted perfectly. Cool it and make granulated Spice Mix powder. We are also going to use this Spice Mix in Stimed Pickle with the same quantity.

Again heats a pan in medium flame with Mustard oil add Awala Slices, stir it for 5 to 10 min. Ones it is soft, add Asafoetida, Turmeric powder, and grounded Mix Masala. Now switch off the flame and keep it aside for 5 to 10 min. Ones it is a little warm, add Red chili powder. Now pickle looks excellent red and tempting.

Note:
Red chili always adds after your pickle mix becomes a little warm otherwise red chili color spoil and become brown-black. That doesn’t look good and also spoils the taste.
Steamed Spicy Pickle:
Steamed Spicy Pickle is also the Awala pickle, but it little sweet-sour and spicy side dish. This side dish you can consume with an everyday meal, dosa, chilla, and ghavan. So, why to weight collect the ingredients. Most of the spices are the same as a Raw spicy pickle.
Ingredients:
- Awala (Steamed) – 1 cup,
- Mustard seeds – 1tsp,
- Fenugreek seeds – ½ tsp,
- Asafoetida – ¼ tsp,
- Turmeric Powder – ½ tsp,
- Cumin Seeds – 1tsp,
- Coriander Seeds – 1tsp,
- Mustard oil – ¼ Cup,
- Jaggery – ½ Cup
- Red Chili powder – 1tbsp.
Recipe:
Take a pan to keep in medium flame, add Dry Spices step – by – step in the pan Mustard seeds, Fenugreek seeds Cumin Seeds, Coriander Seeds to roast well. Ones you find all the spices roasted perfectly. Cool it and make granulated Spice Mix powder.
Again heat a pan in medium flame with Mustard oil adds Asafoetida, Turmeric powder, and grounded Mix Masala. Now add boil Awala buds (seedless Awala), stir it for 3 to 4 min. Ones it is well mixed, switch off the flame and keep it aside for 5 to 10 min. Ones it is a little warm, add Red chili powder and Jaggery into it. Now pickle looks excellent red and tempting. But we can’t serve this pickle immediate because jaggery needs some time to melt and absorb.
Today, we have noted my favorite Awala Chutney and Awala pickles recipe. All Awala recipes which I have shared in the past 4 parts are very healthy for all. Kids used to love Gooseberry taste in anyways and we know the benefits of Gooseberry then decide to cook healthy and feed healthy.
